Yummy Salsa

Yummy Salsa



1 can corn, drained

1 1/2 -2 cups frozen peas, thawed (I just run them under hot water, canned peas are too mushy)

2 avacadoes, cut into small cubes

3 + tomatoes diced

1 bynch fresh cilantro, chopped

1 packet Good Season's Italian Dressing all made, with oil, vinegar, and water. Directions are on the package

1 bunch green onion, chopped



Then you just combine it all. It's better the next day sot the dressing has time to flavor everything, and I usually put the peas in just before serving, because they get mushy as the days go on. You can add a little more of what you really like or take away what you don't really like. Eat with chips!

Fruit Salad

Not exactly healthy.. but delicious!

4 Golden Delicious Apples, cut into small pieces
4 Red Delicious Apples, cut into small pieces
2 Cups Red Seedless Grapes, cut into halves
2 Cups Green Seedless Grapes, cut into halves
1 Can Pineapple (small pieces, drained)
1 Can Mandarin Oranges (drained)

Topping:
1 pkg Cream Cheese (3 oz)
1/2 C Sour Cream
1/2 C Sugar
1/2 C Mayonnaise

Mix fruit together in large bowl. In seperate bowl, mix topping ingredients together with mixer. Put on fruit, coat it over fruit, and voila! Delicious. :)

Fall Caramel Apples

Holy cow, Shel...your last post looks like the death of me! I've never even heard of cake balls. I'll have to give it a whirl sometime!

CARAMEL APPLES:

4-6 medium to large size granny smith apples, or your apple of preference, granny smith is nice because they're tart and it's a good juxtaposition w/ the sweetness of the caramel and toppings

1 - 14 oz. bag of caramels

2 tablespoons milk
Toppings of your choice....chocolate chips, nuts, graham crackers, marshmallows

*Scrub wax off apples so the caramel sticks better*.
Melt caramels over low on stovetop with milk. Remove stems on apples and insert popsicle sticks into bottom. Slowly turn apples in melted caramel until well covered and let drip over pan for 1 minute or so, or until slightly settled. Either *gently* roll apples into topping mixture or place toppings by hand onto apples, which worked better for me, and then place on greased cookie sheet in fridge for 5-10 min...be careful not to leave in for too long or caramel will slide down. EAT UP!

Cake Balls

Teresa Rossi (better known as G-Mama) makes the most AWESOME cake balls! I can't make them as good as she does, but at least I know how so I can practice.... thats what counts right?

Cake Balls

Ingredients

1 chocolate cake mix (and ingredients required on box)
1 can of chocolate frosting
1 bag of chocolate melting chips (these are NOT regular chocolate chips)


Bake the chocolate cake according to directions on box. When hot from oven, take cake and crumble in mixing bowl. Mix in can of semi melted frosting. Let cool in fridge. Take out and roll into 1 inch balls. Place separated cake balls on cookie sheet covered with wax paper. Let freeze for a few hours. Melt chocolate melting chips in a pan or double boiler. Take 4 to 5 balls out of the freezer at a time. If you take them all out, some will thaw too soon. Dip frozen ball into chocolate and place on wax paper to harden. Repeat until all are covered. You can decorate these with icing on top or candy sprinkles, but they are good just by themselves too! Also, you can make different combinations. She makes spice or carrot cake mixed with buttercream or cream cheese frosting and dipped in white chocolate too! AWESOME!!!!!!!

Grandma Bea's Baked Mac & Cheese

As I type I'm baking this in the oven right now, ha! That's what actually made me think to come and post it on here right now. This is Sam's (my husband's) all-time fav dish that I make, and we can thank good ol' Grandma Bea for it!! Even though it's the same recipe, there's something about Grandma Bea's that is always so much yummier. I can never seem to match hers. Needless to say, she is such a good cook! Enjoy!

Preheat oven to 375.

Ingredients:
2 cups elbow macoroni noodles
1 and 1/3 cups cheddar cheese cubed
4 tbsp. butter
2 cups milk
salt & pepper
*optional: 1 piece of bread

Directions:
Boil and drain macaroni.
Pour into casserole dish.
Add butter and stir until melted.
Salt & Pepper to your taste.
Add cubed cheese and stir.
Pour in milk.
*optional: crumble a piece of bread ontop if you'd like a crispy touch on top. It's good!
Place in preheated oven and bake for 45 mins.

Tada!! Enjoy. We make it all the time. Not too many ingredients and not a huge timetaker...except for the waiting 45 mins. to eat it once it's in the oven, haha.

Spaghetti Pie

This is one that I had for the first time in OK while visiting Evan's family. One of our friends, Shawnee, made it and now its a meal we eat often.

Spaghetti Pie

Ingredients:

6oz (or half a box) of spaghetti noodles cooked
1 egg
3 TBS butter
1/2 cup grated Parmesan cheese
1 Jar Spaghetti Sauce
1 lb ground beef or ground turkey
Shredded Mozzarella Cheese


Directions:
1. Cook ground beef or ground turkey and combine with sauce.
2. Cook spaghetti and drain
3. Coat cooked spaghetti in melted butter.
4. In a separate bowl, mix together 1 egg and Parmesan cheese.
5. Combine spaghetti and egg mixture.
6. In a greased pie pan, place spaghetti mixture on the bottom and press down.
7. Place ground beef and sauce on top.
8. Sprinkle shredded mozzarella cheese on top to liking.
9. Bake at 350 degrees for 25 minutes.

(Evan and I like to make this a "Meat lovers" pie by adding cooked turkey peperoni to the top right before baking... YUM!!)

Buttermilk Pancakes and Maple Syrup

Buttermilk Pancakes:
1/4 cup butter, melted
1 1/2 cups buttermilk
1 egg
1 1/2 cup flour
2 tbsp sugar
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla

Combine buttermilk and egg. Add all ingredients, adding the melted butter last. Cook on griddle.

Homemade syrup - this is what I had growing up. There is nothing better than this syrup hot on your pancakes! YUM!
1 cup brown sugar
1 cup granulated sugar
1 cup water

Bring to a boil. Add 1/2 tsp maple flavoring and 1/2 tsp vanilla. Enjoy!

Color-vision Cake:
1 cake mix prepared according to box instructions
1 small box lime jello (you can use any flavor)

Mix 3 tbsp of dry lime jello into cake batter. Bake the cake according to box instructions.

Frosting:
1 1/2 cups sugar
1/3 cup cold water
2 egg whites
1/4 tsp cream of tartar
1 tsp vanilla

In the top of a double boiler combine sugar, cold water, egg whites, and cream of tartar. Add remaining dry lime jello. Beat with an electric mixer on low speed for 30 seconds. Place over boiling water (upper pan should not touch water). Cook, beating constantly with the electric mixer on high speed, about 7 minutes or till frosting forms stiff peaks. Remove from the heat; add vanilla. Beat 2 to 3 minutes more or till it reaches spreading consistency. This frosts the tops and sides of two 8 or 9 inch cake layers or one 10 inch tube cake.

Peach Crisp

Peach Crisp:
1 cup flour
½ cup brown sugar
¼ tsp salt
½ cup butter

Pat into greased 9 inch square pan. Bake at 350° for 15 minutes.

2 16oz sliced peaches
1 cup sugar
¼ cup cornstarch

Drain peaches; reserve juice in saucepan-add sugar & cornstarch. Bring to a boil stirring constantly for 2 minutes or until thickened. Stir in peaches, pour into crust.

Mix 1 ½ cups quick oats, ½ cups brown sugar, ¼ cup flour, cut into 5 tbsp butter. Mix & sprinkle over filling. Bake at 350° for 25-30 minutes. Serve with vanilla ice cream or whipped cream.

Crockpot Mac-n-cheese

Slow-cooked Mac-n-cheese:
16 oz elbow macaroni or rotelle or shells or bowtie, etc.
½ cup butter, melted
2 eggs, beaten
1 can (12 oz) evap milk
1 can (10 ¾ oz) condensed Chedder cheese soup
1 cup milk
4 cups shredded cheese, divided
1/8 tsp paprika

Cook macaroni according to pkg directions, drain. Place in 5 qt crockpot; add butter. In a bowl, combine eggs, evap milk, soup, milk, & 3 cups cheese. Blend together. Pour over macaroni mixture; stir to combine. Cover & cook on low for 1-2 hours. Sprinkle with remaining cheese. Cook 15 minutes longer or until cheese is melted. Sprinkle with paprika.

Spiced Oatmeal Mix

This is a nice alternative to cereal in the morning - homemade oatmeal mix! You can play around with the ingredients to your liking. Enjoy!

Spiced Oatmeal Mix:
8 cups quick-cooking oatmeal
1 1/2 cups chopped mixed dry fruit
1/2 cup sugar
1/2 cup brown sugar
2 1/2 tsp ground cinnamon
1 tsp salt
1/2 tsp nutmeg

In a large bowl, combine all of the ingredients. Store in an airtight container for up to a month. Contents of mix may settle during storage. When preparing recipe, spoon mix into measuring cup. In a deep microwave-safe bowl, combine 1/2 cup oatmeal mix and 1 cup water. Microwave, uncovered, on high for 1-2 minutes or until bubbly, stirring every 30 seconds. Let stand for 1-2 minutes before serving. Yield: 18 servings.

Chocolate Chip Oatmeal Cookies

The Best Chocolate Chip/Oatmeal Cookies:

Mix together 2 cups brown sugar, 2 cups white sugar, 2 cups real butter, softened, 4 eggs, 4 cups flour, 1 tsp salt, 2 tsp baking powder, 2 tsp baking soda, 2 tsp vanilla, 5 cups oats, & 1 cup mini chocolate chips.

Mix together adding oats & chocolate chips last. Bake at 400 degrees for 6-8 minutes. Can divide recipe in half. SO tasty!

Biscuit-Topped Chicken Pie:

This recipe is perfect in the fall and you can mix up everything beforehand except the angel biscuit recipe so you can put it in the fridge the night before and when you get home you can mix up the biscuit recipe and put it on top and bake it. This is a family favorite in my house!

Biscuit-Topped Chicken Pie:
2 cups chopped cooked chicken
6 - 8 hard boiled eggs, sliced
1 can corn, drained
dash of salt
1/4 tsp pepper
2 2/3 cups chicken broth
1 can cream of chicken soup
1 recipe angel biscuit dough*

Preheat oven to 425 degrees. Place chicken in baking dish; cover with sliced eggs and drained corn. Sprinkle with salt and pepper. Mix broth and soup; pour over chicken.

Angel Biscuits*:
2 ½ cups flour
2 tbsp sugar
2 tsp baking powder
¾ tsp salt
½ cup shortening
1 cup milk
1 tbsp yeast dissolved in ¼ cup warm water

Combine dry ingredients in large bowl. Add shortening and cut in until mixture is crumbly. In separate bowl whisk together milk & yeast. Pour over dry ingredients. Roll dough into ball and knead on floured surface 20-25 times. Pat into ½ inch thickness. Cut Angel Biscuit Dough into rounds with a biscuit cutter; arrange over chicken. Bake for 30 minutes; serve hot. Yield: 6-10 minutes.

Zucchini Bread

It's that time of year - harvesting your zucchini! Here is a fabulous recipe that I recently found. Enjoy!

Zucchini Bread
Makes 2 loaves
3 eggs
2 C sugar
1C oil
1 tsp. vanilla
2 C raw shredded zucchini
Beat well together. Add the following ingredients.
3 C flour
1 ½ tsp. baking soda
1 tsp. salt
½ tsp. baking powder
3 tsp. cinnamon

Optional: add ½ C nuts, ½ C raisins, or ½ C chocolate chips.

Pour into greased pans. Bake at 325 for 1 hour.

Double Chocolate Chip Cake Mix Cookies

Ingredients:
1 Devil's Food Chocolate Cake Mix
1 Egg
1 Stick butter (melted)
1 Tablespoon oil
1 & 1/2 cups chocolate chips

Directions:
Preheat oven to 350 degrees. Mix cake mix, egg, melted butter, oil, and chocolate chips in bowl. Shape cookie mix into small balls and flatten with palms. Place an inch apart on greased cookie sheet. Bake for 8 to 10 minutes.

MONSTERS

I got this recipe from Evan who got it from his mom, so technically its from her. Evan LOVES these and I was a little skeptical when I first tried them, but we love them so much now that we sometimes have them for dinner too. I love them because they are SO EASY and taste great. You can serve them with syrup or they are good with jelly and powdered sugar on top too. Evan and I can finish a whole 9X13, so if you are making it for more than 2 or 3 people, you need to make 2 batches. Enjoy!!


Monsters

Ingredients:
1/2 stick butter
6 eggs
1 cup flour
1 cup milk
1 tsp salt
(Optional: syrup, jelly, strawberries, whipped cream, etc)

Directions:
Put 1/2 stick of butter in a 9x13 pan. Put the pan in the oven to melt the butter while the oven is preheating to 450 degrees. While the butter is melting and the pan is getting hot. Mix together 6 eggs, 1 cup flour, 1 cup milk and 1 tsp salt. Whip together until well mixed. Open oven and pour mixture over the melted butter. Set timer for 22 minutes. Eat with syrup or strawberries and whipped cream or whatever you like on pancakes or french toast.

Texas Flank Steak

1/2 cup soy sauce
1/2 cup vegetable oil
3 tbsp red wine vinegar or cider vinegar
3 tbsp barbecue sauce
3 tbsp steak sauce
2 tbsp dried minced onion
1 tbsp liquid smoke flavoring
1/2 tsp garlic powder
1 (1 1/2 lb) beef flank steak

In a large resealable plastic bag, combine first 8 ingredients. Add the steak; seal bag and turn to coat. Refrigerate for 8 hours or overnight. Drain and discard marinade. Grill steak, covered, over medium-hot heat for 6-8 minutes on each side or until meat reaches desired doneness. Yum!

Christmas Chicken Spaghetti

I got this recipe from the Sherman Service League cookbook and this is by far one of the best Chicken Spaghetti recipes I have found! It is very flavorful and yummy!

**Christmas Chicken Spaghetti**

4-6 boneless, skinless chicken breasts
1 small chopped onion
1 cup chopped celery
½ stick butter or margarine
1 tbsp. Olive oil
1 (12 ounce) package vermicelli (spaghetti noodles)
Garlic Powder

Boil chicken and season as desired (garlic powder, salt.) Reserve broth. In a pan, saute onion, celery, butter and olive oil. Add soup, ripe olives, Velveeta and season to taste with garlic powder. Cook until cheese melts, stirring often. Boil vermicelli according to package directions. Drain. Combine vermicelli, chopped chicken and soup mixture with 1-1 ½ cups chicken broth. Mix well. Pour into lightly greased casserole dish and bake at 350 for 20 minutes.

Cracker Barrel Hashbrown Casserole

This stuff is so good!! It tastes just like the kind from Cracker Barrel. My family is now addicted to it and has it every Sunday. Enjoy!

Cracker Barrel Hashbrown Casserole


Ingredients:
1 cup diced onion
1 stick butter, thinly sliced
1 (8oz) container sour cream
1 (8oz) pkg Kraft Cracker Barrel Sharp Cheese
1 Can cream of chicken soup
1 (2lb) bag frozen hashbrown potatoes (thawed)
1/2 to 1 cup of potato chips crushed (regular lays work best)

Directions:
Stir together all ingredients except the chips. Mix well. Spread in a 9X13 dish and top with crushed chips. Bake at 350 for 1 to 1.5 hours.

Balsamic Almond Chicken

This is quite delicious. Alex and I LOVED it, and it's very easy to make.


1/2 C ground almonds
1/4 C all purpose flour
2 eggs
2 boneless chicken breasts (or 4 halves)
2 TBS canola oil
1 tsp cornstarch
1/2 C chicken broth
2 TBS balsamic vinegar
1 TBS brown sugar

  • Combine almonds and flour in one bowl. In another bowl, whisk eggs.
  • Flatten chicken to 1/4 inch thickness. Dip chicken in eggs; then coat with almond mixture.
  • Cook in oil over medium heat for 4-6 minutes (on each side)
  • Meanwhile, combine starch, broth, vinegar and brown sugar until smooth. Bring to a boil; cook for 2 minutes whilst stirring-(or until thickened).
  • After chicken is cooked, pour sauce over chicken and enjoy.

Truly, it's so delicious, and you don't feel guilty eating it either!

Josh's HomeadeTeriyaki Sauce

This is great as a chicken dressing or to even make your own chicken teriyaki pizza (personal fav) Super easy and super tastey!

1c- soy sauce
1c- brown sugar
1- clove minced garlic
green onion (as much as you'd like)
1/2c- puree pineapple

Combine in sauce pan. Keep on low and let it simmer until you're ready to use. Stir often.

Chicken Tortilla Soup

I am constantly adding to and changing this recipe to become better but this is the best combination I have come up with so far.


Chicken Tortilla Soup

Ingredients:

3 boneless chicken breasts
1 large can of enchilada sauce
2 cans of cream of chicken soup
1 can of black beans
1 can of mexican style rice
1 can mild rotel
2 cans full of water
salt and pepper to taste

Optional:
1/2 bag of shredded cheese of choice
tortilla strips
sour cream
avacado

Directions:
1. Boil chicken in large saucepan.
2. Using 2 forks, shread chicken into pieces.
3. Open can of black beans and rotel drain juices into sink.
4. In large crock pot, mix the following ingredients together: shredded chicken, enchilada sauce, cream of chicken soup, drained rotel, drained black beans, mexican style rice, and 2 cans full of water.
5. Cook in crock pot on low for at least 2 hours.
6. Ladel soup into bowl and garnish with shredded cheese, sour cream, avacado, and tortilla strips to liking.

Feeds 6 people

Oatmeal Fudge Cookies

So, basically every Sunday growing up we'd make a batch of these (if not 2 or 3!) and lots of times in between. They're the Brigmon Oatmeal Fudge Cookies and watch out cause these suckers are addicting!!

Ingredients:

1/2 c. butter
1/2 c. milk
1/3 c. cocoa
2 c. sugar
1/2 c. peanut butter (smooth or crunchy, depends on your preference)
1 c. oatmeal (instant is the best)
Foil or Wax Paper

Directions:

Melt butter on low on stovetop. Once melted add milk. In a separate bowl mix together cocoa and sugar until blended. Stir into butter/milk combo until blended. Turn heat up to medium-high until mixture is rapidly boiling. Once rapidly boiling, let boil for 3 minutes. Then, take off heat and stir in peanut butter until melted. Add oatmeal. Pour cookie size amounts onto foil/wax paper and let cool until hardened. Enjoy!

Strawberry Cake Mix Cookies

When I worked at Cretia's bakery in high school, my favorite cookies were the strawberry cream cheese cookies. My mom also liked them ALOT. She found a cake mix cookie recipe online and experimented with it. Eventually she came up with what we now know as the "Pink Cookies".

Strawberry Cake Mix Cookies or "Pink Cookies"

Ingredients:

1 Strawberry cake mix
1 egg
1/2 c butter melted
1/4 c walnuts
1/4 c coconut
1/4 c raisins
1/4 c oatmeal

Directions:

1. Mix all ingredients in bowl.
2. Spoon small spoonfuls of dough on greased cookie sheet
3. Bake at 375ยบ for 10-12 minutes. (Watch carefully because these cookies are better when underbaked.)
